Aceto Balsamico Tradizionale di Modena D.O.P.

The must of Sorbara and Trebbiana grapes is simmered for a long time and is then left to age in barrels of various sizes made of different types of wood, where it is stored for many years until it becomes the Oro Nero (Black Gold) of Modena. Several wood species are combined to enhance the aromatic bouquet that is characteristic of this balsamic vinegar, such as oak, mulberry, chestnut, cherry, acacia or black locust and, sparingly, juniper.
This product ages over the course of many years, at least 12, until it becomes the Traditional Balsamic Vinegar of Modena, whereas it takes more than 25 years to obtain the prized Extravecchio, a true delicacy with a distinct charm, which can be appreciated simply by tasting a few drops.
